LEMON & MICRO HERB SALAD WITH PARMESAN SNOW AND BOILED EGG | 10 portions

Lemon dressing

80ml x Fresh lemon juice

500ml x Olive oil

15g x Crushed garlic

50g x Dijon

3g x Salt

2g x Pepper

Combine all ingredients and blend with a immersion blender to form a emulsion

Herbs

250g x Rocket  

100g x Dill

120g x Basil

30g x Mint

50g x Parsley

Pick all the herbs from there stems and combine discarding the stems

Micro herbs

80g x Beetroot shoots

80g x Pea shoots

Rinse and combine with the large herbs

 

Accompaniments:

3 x Avocado ripe, sliced

150g x Grated parmesan

10 x Hard Boiled eggs, shelled and cut into half

 

ASSEMBLY:

Assembling the salad place all the herbs at the bottom of the salad bowl

Arrange the halved eggs on top of the herbs

Arrange the avocado on top of the herbs between the eggs

Dust the grated parmesan over the salad and serve with the dressing on the side
